Burrito Bowls!

Ingredients:
-1 tablespoon Olive Oil
-1 Red Pepper, diced
-1/2 Onion, diced
-1 pound Ground Beef
-1/2 cup Salsa
-15 oz can Black Beans, drained and rinsed
-15 oz can Corn, drained
-14.5 oz can Diced Tomatoes
-4 oz can Diced Green Chile Peppers
-1 cup Jasmine Rice, uncooked
-1 tablespoon Taco Seasoning
-1/2 teaspoon Chili Powder
-2 cups Chicken Stock
-Salt and Pepper
1. Heat the oil in the pan.
2. Sauté the onions and peppers. Then add the ground beef and brown.
3. Drain the grease. Add salt and pepper. Stir in salsa, black beans, corn, tomatoes, green chiles, jasmine rice, taco seasoning, and chili powder.
4. Pour in chicken stock, bring to a boil, then lower to a simmer, cover for 15 minutes.
5. Add cheese if desired and serve.
